They tell some stories of sailors that the "pulpo seco" began to dry on boatsuentan and used as a substitute for tobacco for sailors who spent so many hours at sea.

The image of octopus drying in the sun, as if it were clothes, is one of the most typical images of Denia and that, in the past, was seen in a habitual way. Today it can be seen only in certain restaurants on the coast of Dian. Drying the octopus with the sun and sea breeze is an art that requires care and specific conditions that occur in certain months of the year, always controlling that the environmental humidity is not excessive.

PST PST... A SECRET: The most important thing of this dish is to wash the octopus well before letting it dry as you have to remove all the remains of sand/ earth that the octopus may have. It tends to the sun and is collected at sunset so that it does not catch moisture.
Once dry the legs are roasted on the fire (cooked directly to the flame) or on an iron plate until well browned. Cut into thin slices and garnish with a good olive oil. This dish is recommended to eat it hot as it is much more tasty.
