DÉNIA as Creative City of Gastronomy by the UNESCO that is, strives to maintain the essence of its raw material, so that its flavor remains intact.
Its famous and exquisite GAMBA ROJA DE DÉNIA (DÉNIA RED PRAWN) is cooked in two simple ways: O shrimp cooked with sea water (at about 60ºC) neither more nor less, or grilled. It retains all its flavour and splendour.
It is important to indicate that it is a source of vitamins of group B , has high content of iodine and iron, as well as in Selenium and Zinc that favor the immune system.
INNOVATION AND CREATIVITY
It is also innovated with the red prawn of Dénia. It is a source of inspiration in the "Concurso Internacional de Cocina Creativa de la Gamba Roja de Dénia" (International Creative Cooking Competition) which takes place on a Tuesday in February or March and where 8 cooks make creative dishes whose protagonist is the red prawn of Dénia and where the jury will always value the degree of conservation of its essence.
ORIGIN AND VARIETY
Son hey are fished in the fisheries between Denia and Ibiza, at a depth of 600 meters, and there are 4 categories according to their sizes. The largest, category 1, is the most coveted and the most expensive. It is followed by the following categories as it decreases in size. In the Dénia fish market, the size selection is very careful and the shrimp is whole and intact as a delicate product.
Their sizes do not depend on their age but on their sex. They are all adult prawns (when they are breeding they are at greater depth, safe from nets). The largest are females and the smallest are males.
It is very curious that this exclusive product had very modest origins in the world of gastronomy. Neither fishermen nor consumers saw any benefit in it and many times returned it to the sea or referred it to the "morralla" for the fish broth.
In Denia it began to be served as an accompaniment cover and at no cost, in the "Bar Torres" or in "Casa Pepe" which were located on Diana Street.
